I've been collecting pets since Vanilla launch, where pets took up nearly all of my bank and bag space (I rejoiced the patch where we could "learn" pets). The first pet I ever got was the Dark Whelpling, when levelling through Badlands on my main back at launch.
I never named a pet when playing Pokemon, and I've taken to that here as well, even though when I see a really clever pet name I laugh hysterically. Pokemon was an addiction as a child, and still is as an adult, and this has bled through to WoW pets, and now that we can battle with them, oh man! :D
My goals are pretty much the same as many of you: Get every pet and then make every pet as high quality and level it to max.
In terms of pets I don't have yet, the big one is obviously Murky! I don't know if I'll ever put the money down for him, but its a pipedream!
