It looks like this one is a rare spawn of Slabwing. I recommend running around Sulfur Wastes where you can find lots of yellow Slabbers ;) Bonus, you will eventually stumble upon a red version of Slabwing as well xD

Found one at /way 47.0, 67.71. It seems to hang around Underlight Flickerwings.

Found one near Glimmerogg (as it hints in the description), /way 41.2, 74.6. I would assume this is a rare spawn of Cobbleshell.

Found a blue version around Cascades Column (/way 43.6, 71.7)

My strategy was to find a random pet with two Piculets as secondary companions. It took me approx. 49 min to force the color switch by entering and walking out (without making any moves). But I can officially say, I have the pretty white one now x) 

The black/red one is a very rare spawn of regular colors. Never seen one as a front pet as I "force-switched" the colors of the secondary pets ;) 

You will find critters anywhere really as long as it is by the water, but there will be only one active battle pet at any given time. Luckily there are only 3 spots to look at in Thaldraszus x)

Has anyone seen the white one with red eyes yet? I've been trying in Azure Span where the snow is but nothing :(
